Scalloped potatoes with Spinach, bologna sausages and Philly cream cheese

I had some scalloped potatoes at an Italian restaurant served with steak. It tasted so good, i had to  replicate with my own twist. Here is scalloped potatoes made like quiche but moist in and crunchy on the top and a little sweet. There's spinach, bologna cheese, cream cheese"(her and garlic),whole cream, eggs, a pinch of sugar. I missed the nutmeg flavoring because i was out of nutmeg. 
In the picture below, served with poached pear slices.{this is usually a dessert feature... blame my current craving at the time :)}

Potatoes: Cut into cubes, boiled in water and salt. Fried or Baked. Sprinkled with Oregano...
Eggs: Green & red bell peppers, Tomatoes, onions, spices & eggs.

In boarding school this was a luxury and illegal, enough said. Its spaghetti, eggs, salt and pepper. I just added in sausage slices, just cause i could.

After Night Work outs

Working out in the evening makes you sleep so much better; but working out makes you hungry.


Eating at night gives u a huge tummy... after 8pm is a bad start. So here is my version of guilt free healthy .. not fat free After night work out meal.  -Yogurt and some black rasp berries (good antioxidants)  -whole wheat toast and 2 sunny side up(Extra cooked) eggs...i cant do raw eggs..uuumm NO!
{there is a trick my mom taught me; see how my eggs are cooked but they are not brown? i did that without flipping them..lol..not telling. ask me if u want it}

Brunching!! friends over yum!

The pictures speak the word!!!! We have
-Pancakes-- made some plain and some with chocolate inside.hmmm
-Sausages-- a few friends don't eat pork so some chicken and some pork
-Cheese eggs-- milk, eggs, cheese, salt, table butter and black pepper
-Hash browns-- the usual...topped with sweet barbecue sauce and onions
-Spagsss ---or my version of it. I found out about spags in boarding school. its something that Cameroonians make with spaghetti and eggs. i used noodles and eggs and beef and then i made a chunky tomato sauce and greens and then i let it set..so it looked like a pie..tasted good. they can testify !!! ;)

sowwy we had no fruits or orange juice..would have been a lot!!

French toast and Egg goodness!

Breakfast for dayss..

and years...:)

Before July i hadn't had egg in like 4 months. pretty much since my sister left me :( lol. Well i never really got around to buying it. Needless to say i did not miss it enough to want it. It has to be well done for me to like it, this, ...this is well done! ;)

The french toast, may never be as good as my moms, but i loved it. My aunt in the states showed me a secret i did not know. she put some sugar in her french toast mixture. jeezzz good good stuff.

The egg, ok the egg, ok the EGGGG ---- haha i put corn beef and parsley and onions and chopped fresh habanero peppers (Aunty Mary taught me that as well). Quit frankly back home..its all we know, here all they know is hot sauce and jalapeno's and habanero's are just known as the hottest to them. Africans!!! the hottest is our only known.. haha i just love being African and even more being Cameroonian! Can't get any better...woohooo
